Question about D.E. Hulls, some boats run flat with the bow cutting through the water, others run with the bow in the air; running, it appears on the flat back surface of the stern. Can anyone explain the difference and which is more efficient, seaworthy ,etc.,etc.?

No 2 hulls are alike.. so if you have any particular hulls in mind, maybe some can chime in on why the displacement hull is cutting through the water and the plaining hull is more on top with the bow up.
